This was the last step I had to do.
After a "reset list" on the Clients/security page the PS3 showed up as PS3.
Now all the files stream perfectly.

I did some testing this afternoon, and it seems that PS3 identified itself differently, as my Clients.db was listing my PS3 as DLNA Complaint 1.0 device. Unfortunatly, If you have a NAS device, you will have to wait for your vendor to incorporate a official Twonky fix.
