Hallo,
Can anybody give me a tip/help/link for a description, how to update an existing Media Server on Debian?
I only can find an installation manual.

Just run the installer.
Personally I use the manual install option and move the old version out of the way (eg rename it to twonkyserver-6.0.38 and then install the new version. Then I've always got a simple step to revert to the previous version if there are issues.

like DaemonBeetle I run TMS on a Linux server and definitely want a plan B if an update fails. What I do differently though, is that I unpack over the existing install after making a backup. That way my settings and caches are retained.
e.g. when I updated from 6.0.37 to .38
